.Spaghetti and Eyeballs.

.Ingredients.
2 lbs. lean ground beef
1 1/2 cups seasoned bread crumbs
2 tbsp. ketchup
2 eggs
1 tbsp. fresh basil or 1 tsp. dried
1 7-oz. jar pimiento-stuffed olives
1 26-oz. jar prepared pasta sauce
1 lb. spaghetti
1 tbsp. olive oil


.Instructions.
1. Preheat the oven to 350 degrees.

2. Mix the ground beef, bread crumbs, ketchup, eggs and basil in a large bowl. Using the meat mixture, form about 30 small meatballs.

3. To make the eyeballs, press an olive into each meatball, pimiento side out. Place the eyeballs in a baking dish, cover with the pasta sauce, and bake for 45 minutes.

4. Meanwhile, cook the spaghetti in boiling salted water. Drain and rinse the spaghetti and toss with 1 tablespoon of olive oil to prevent strands from sticking together. Put it on a platter or in a large serving bowl.

5. Spoon the eyeballs onto the spaghetti, irises up, and spoon the pasta sauce around them. Makes 10 servings.

.Troll Snot Pasta.


Troll Snot Pasta Halloween Recipe

.Ingredients.
2 or 3 whole garlic cloves, peeled
1/4 cup pine nuts or walnut pieces
1/2 teaspoon salt, plus 2 teaspoons for the cooking water
2 cups packed fresh basil leaves (about 3 ounces), plus extra for garnish
1/2 cup olive oil, plus 1 tablespoon for the cooking water
2/3 cup freshly grated Parmesan cheese, plus more for garnish
1 to 2 tablespoons butter, softened
3/4 pound angel hair pasta
1 19-ounce can chickpeas, drained and well rinsed


.Instructions.
1. Combine the garlic, nuts, and 1/2 teaspoon of salt in the bowl of a food processor and process the ingredients until they are finely chopped. Add the basil and olive oil and process again until the herb is finely chopped, stopping to scrape down the sides of the bowl several times.

2. Transfer the mixture to a bowl, then stir in the cheese and softened butter. Spread half of the pesto in the bottom of a shallow pasta serving bowl and reserve the rest.

3. Now prepare the pasta by bringing 4 to 5 quarts of water to boil in a large pot. Add 1 tablespoon of olive oil and 2 teaspoons of salt to the boiling water. Gradually add the pasta and cook it according to the package directions. Add the chickpeas for the last minute of cooking.

4. Once they've cooked, immediately drain the pasta and chickpeas and transfer them to the pesto bowl without delay to keep the cooked angel hair from clumping together. Spoon the remaining pesto onto the pasta and toss well. Serve at once, garnishing each portion with grated Parmesan cheese and fresh basil leaves. Makes 4 to 5 servings.

.Jack-O-Lantern Pasta Dinner.


Jack-O-Lantern Pasta Dinner Halloween Recipe

.Ingredients.
6 -8 medium orange bell peppers, washed and dried
8 ounces orzo pasta or 8 ounces spaghetti
1 (25 ounce) jar pasta sauce, warmed (I love Mezzetta Napa Valley Bistro Tomato and Basil sauce)


.Instructions.
1. Carve each bell pepper as you would a Jack-O-Lantern, cutting the top off and hollowing out the inside before carving a face.

2. Discard the tops.

3. Cook pasta according to package directions.

4. Drain Pasta.

5. Mix pasta with warm sauce and spoon into each individual pepper, making sure the pasta 'oozes' out the eyes, mouth, and top of pepper.

6. Serve with breadstick 'bones'--tie a knot at the end of each breadstick, bake, and enjoy!

.Monster Mouths.


Monster Mouths Halloween Recipe

.Ingredients.
Jumbo Pasta Shells
Hamburger
Spaghetti Sauce
Facial garnish (pickles, cheese, carrots, olives, etc)


.Instructions.
1. Cook the jumbo pasta shells according to the package directions. Let them cool so you can work with them.

2. Cook the hamburger. Drain. Add spaghetti sauce. You want it to be thick so don't add very much spaghetti sauce.

3. Fill the shells with meat mixture.

4. Put in a lightly greased 9 x 13 inch pan and cook for about 5 minutes in a 350 degree oven. Just enough to get them warm again.

5. Garnish with eyes and teeth.

.Puking Pumpkin Pepper.


Puking Pumpkin Pepper Halloween Recipe

.Ingredients.
spaghetti with pasta sauce (your choice)
orange bell peppers


.Instructions.
1. Make up your favorite version of spaghetti. (You can even use chicken spaghetti!)

2. Carve the top off your bell peppers, take out all of the seeds (and as much of the veins as you can).

3. Carve little jack-o-lantern faces into the sides of your bell peppers.

4. Fill with spaghetti, pull some out of the mouth for puking effect!


.Tips.
You can soften the bell pepper by baking or steaming them for several minutes.

.Worms with Oozing Eyeballs.


Worms with Oozing Eyeballs Halloween Pasta Recipe

This makes 8 servings - increase recipe as needed.


.Ingredients.
2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs
1 jar (26 oz.) spaghetti sauce, divided
4 sticks KRAFT STRING-UMS String Cheese, cut into quarters
4 pitted large black olives, cut into 4 slices each
1 pkg. (1 lb.) spaghetti


.Instructions.
1. HEAT oven to 375ºF.

2. MIX meat, stuffing mix, water, eggs and 1/4 cup spaghetti sauce. Shape into 16 (2-inch) meatballs. Insert 1 cheese piece into top of each meatball, with end of cheese piece just showing at top. Place on baking sheet. Top each with olive slice to resemble eyeball.

3. BAKE 20 to 25 min. or until meatballs are done (160ºF). Meanwhile, cook spaghetti and heat remaining spaghetti sauce as directed on package and jar.

4. DRAIN spaghetti. Serve topped with meatballs and sauce.



.Tips.
* Substitution: Prepare using 2 pkg. (16 oz. each) thawed frozen LOUIS RICH Pure Ground Turkey instead of ground beef.
* You can use frozen meatballs as well, make as directed. Place cheese pieces on microwavable tray, microwave on high for a few seconds until melted. Scoop up with a butter knife and place onto your meatballs, add olive slice.

.Baked Eyeballs Casserole.


Baked Eyeballs Casserole Halloween Pasta Recipe


.Ingredients.
vegetable cooking spray
1 jar (1 lb. 11.5 oz.) Prego® Italian Sausage Hearty Meat™ Meat Sauce
1 container (15 oz.) part-skim ricotta cheese
3/4 cup grated Parmesan cheese
7 cups bow tie-shaped pasta , cooked and drained
1 container (8 oz.) small fresh mozzarella cheese balls (about 1-inch)
2 tbsp. sliced pitted ripe olives


.Instructions.
1. Spray a 13 x 9 x 2-inch shallow baking dish with the cooking spray.

2. Mix 1 1/2 cups pasta sauce, ricotta cheese, 1/2 cup Parmesan cheese and pasta in the prepared dish. Spread the remaining pasta sauce over the pasta mixture. Sprinkle with the remaining Parmesan cheese and cover with foil.

3. Bake at 400°F. for 25 min. or until hot. Arrange the cheese balls randomly over the pasta mixture. Place a sliced olive on each cheese ball. Let stand for 10 min. before serving.


.Tips.
* Easy Substitution: If fresh mozzarella cheese balls are not available, substitute 1 package (8 oz.) fresh mozzarella cheese. Cut crosswise into thirds. Cut each third in 6 wedges, for triangle-shaped eyes.
